DEEP DISH MEAT PIE



   2 deep dish pie shells, unbaked
   2 cans corned beef hash
   2 (10 ounce) frozen spinach, thawed and drained
   1 (10-1/2 ounce) can cream of mushroom soup
   1 tablespoon mustard
   1 teaspoon horseradish
   1/4 cup flour
   2 eggs
   Cheddar cheese

   Spread corned beef hash in bottom of pie shells. Mix spinach, mushroom soup, mustard, horseradish, flour, and eggs together and spread atop hash. Sprinkle cheese on top and bake at 350 degrees for 30 minutes.

CARTER'S APPLE CAKE



   1/3 cups margarine
   2/3 cups sugar
   1 cup white flour
   1 cup whole-wheat flour
   1/2 teaspoons cinnamon
   1/2 teaspoons ground cloves
   1/2 teaspoons nutmeg
   1/2 teaspoons salt
   1 teaspoon baking soda in 2/3 cups water
   1 cup finely chopped apple
   1/3 cups raisins
   1/3 cups chopped walnuts
   2 egg whites whipped

   Cream the margarine and sugar. Add dry ingredients and water alternately, then apple. Dust the raisins and nuts with a small amount of flour and add them to the batter. Fold in the egg whites. Bake in a 8 in. Square nonstick pan at 350 degrees for 30 to 40 minutes or until firm.

IROQUOIS SOUP



   4.00 cups chicken broth
   1.00 cup green or yellow onion, chopped
   2.00 tablespoons cornmeal
   0.75 pound haddock, trout, or bass fill
   1.50 cups fresh lima beans (up to 2 cups)
   4.00 wild mushrooms, to 6 mushrooms
   2.00 tablespoons fresh parsley, chopped
   2.00 tablespoons fresh dill, chopped
   Salt and pepper

   Add green onions and corn meal. Simmer over low heat for 10 minutes. Add fish fillets, lima beans, and mushrooms. Continue cooking for 25 minutes, stirring occasionally and breaking the fish into small pieces. Add parsley and dill. Cook for 1 minute longer. Season to taste with salt and pepper and serve.

WARM SPINACH SALAD WITH BALSAMIC VINAIGRETTE



   1 cup bulk andouille, finely chopped
   2 tablespoons shallots, minced
   1 tablespoon garlic, minced
   1/2 cup yellow onions, finely chopped
   1/4 cup balsamic vinegar
   3/4 cup olive oil
   Salt to taste
   Freshly ground black pepper to taste
   1 cup red onions, julienned
   4 cups fresh spinach, cleaned and stemmed
   12 goat cheese balls, 1 ounce each
   Edible flowers
   Black pepper

   In a hot sauté pan, sauté the andouille, shallots, garlic, and onions. Sauté for 2 to 3 minutes. Remove from heat and add the balsamic vinegar. Turn into a mixing bowl and whisk in the olive oil. Season with salt and pepper. In a large mixing bowl, toss the spinach, onions and vinaigrette together. Season with salt and pepper. Place the greens in the center of the plate. Arrange three of the goat cheese balls around the salad. Garnish with the edible flowers and black pepper.

OATMEAL RAISIN SHEET CAKE



   3/4 cup boiling water
   1 1/2 cups raisins
   1 1/2 cups brown sugar
   1/2 cup shortening
   2 eggs
   1 teaspoon cinnamon
   1/2 teaspoon cloves
   1 teaspoon soda
   1 teaspoon vanilla
   3 cups flour

   Simmer raisins and water for 10 minutes. Cool. Meanwhile, mix the brown sugar, shortening, eggs, cinnamon, cloves, soda, and vanilla then flour. Add the raisin and water mixture. You may add 1 cup of nuts or 1 cup of coconut. Spread on large cookie sheet, making middle thin. While baking, make icing. Icing: 1 cup of powdered sugar, 1/2 stick of margarine, softened and 1/4 cup of milk.
