PERENNIAL BLACK BEAN RICE SOUP CAJUN STYLE
   1 pound black beans
   1/2 pound rice
   1/2 pound ham
   1 medium onion - diced
   Bay leaf
   2 tablespoons brown sugar
   1 tablespoon garlic powder
   1/2 teaspoon salt
   1 tablespoon chili powder
   1/4 teaspoon tabasco sauce
   1 teaspoon cajun seasonings
   2 teaspoons liquid smoke
   1 1/2 gallon water
   1 pint roux
   Sauté onion, ham and bay leaf in 2 tablespoons butter in the bottom of a pressure cooker. Sauté at medium heat for about 10 minutes. Add black beans and all seasonings and water. Seal pressure cooker, bring to temperature for 45 minutes. Cool down pressure cooker and remove cooker. In a separate pan, boil rice until tender. Cool and rinse with cold water. Place pressure cooker back on burner with cover off. Bring to boil then slowly add roux until thick. Add cooked rice. Adjust seasonings and serve.
